Although Luis Anibal’s family has been growing coffee for over 60 years, it’s only been 12 years today that he has focused on producing specialty coffee exclusively. He grows many different varieties to set his position in the coffee industry and build a sustainable career. This microlot is from his Geisha variety. Luis Anibal found that a 15-hour fermentation in his honey process gave him a consistent profile, allowing most of the mucilage (or fruit flesh) on the beans to dry and create tropical flavours with enhanced sweetness and texture. His Geisha trees grow in a microclimate that’s considered very cold for the altitude, so his plants took a lot longer to become productive. This also meant that his coffee cherries would ripen at a very slow rate, enhancing the sugars in his beans. The cherries of his Geisha trees are recorded to have some of the highest sugar content among other Geishas in the region.
