There are several takes on a 'honey' process. The core idea is to remove the coffee cherry's skin while leaving a controlled amount of mucilage (fruit flesh). There isn't any actual honey involved in the process. Depending on how much mucilage remains, we can produce varied results in flavor and complexity. White or yellow honey would have minimal mucilage left on the coffee seed during drying. A red, gold, or black honey has more mucilage and a darker hue as it dries, hence the name. It's harder to manage a darker honey process with potential over-fermentation or mold forming. Still, the results in the final cup will change your perspective on what coffee has to offer in flavor.

From this relationship, Leonid receives an increased income with as much as four times more than the local market rate for his raw and processed coffee.
