For those that experienced our limited release Geisha Cascara early in 2020, the name Jairo Arcila will ring a bell. From the same producer and his family at Finca Castellon, it's a great pleasure for us to bring some of Jairo Arcila's finest coffees in the form of our Specialty Drip Bags.
While Jairo Arcila cultivates and produces a diversity of Arabica varieties, this coffee is 100% Castillo. The Castillo variety was developed by the Federation National de Cafeteros and is know for it’s high production and resistance to coffee leaf rust. It is processed at the La Pradera station that lies close by to the estate in El Cailmo, Quindio.
After the Castillo crops are selectively picked for the ripest cherries, the coffee undergoes unique processing at La Pradera. This coffee was exposed to a dry anaerobic fermentation of 24 hours, later placed inside plastic tanks for 42 hours with a maintained ambient temperature of 20°C. While this is happening in sealed vessels, any oxygen inside is replaced with carbon dioxide to slow and alter the fermentation. The coffee then is put out to dry on raised beds before being kept in bags, drying down to a targetted 10.5% moisture content before milling.
Expect a complex, exotic flavour profile that's sweet, layered with deep sweet fruits, and full of texture.
